The winery
Cantina del Taburno is based in Foglianise, at the foot of Monte Taburno in the Sannio Beneventano. Established in 1972. Fruit comes from about 600 ha on the mountain's slopes, in Foglianise, Torrecuso, Vitulano, Campoli del Monte Taburno, Castelpoto, Apollosa, Bonea, Montesarchio, Ponte, Tocco Caudio, Paupisi and Benevento, supplied by local growers. Reds rest in large oak casks and barriques in the historic bottaia. Production includes whites, reds, sparkling wines, selections and specialties.

Wine details
100% Falanghina from Benevento, Campania, on calcareous clay marl soils. Hand-harvested in September; whole-grape soft pressing, fermentation in stainless steel tanks for about 15-20 days, then Martinotti second fermentation in autoclave for about 2 months. Straw yellow, lively mousse of medium persistence. Nose with hints of exotic fruit, ginestra and light bread crust. Slightly off-dry, fresh and saline. Serve at 7-9 °C. Pairs from aperitif to fish first courses, pasta, white meats, and pizza.
Region
Volcanic complexity meets ancient viticulture across Vesuvius, Irpinia and the southern coast. Fiano and Greco rank among Italy's finest whites; Taurasi delivers Aglianico at its most powerful. Strong terroir credibility, food-pairing versatility and margins that work across all menu tiers.
